Ingredients
For the roll-ups:
- 1 tablespoon olive oil
- 1 chicken breast boneless and skinless
- kosher salt to taste
- freshly ground black pepper to taste
- 1 (8-ounce) package cream cheese room temperature
- 1/4 cup parmesan freshly grated
- 2 tablespoons chives chopped
- 1/2 teaspoon garlic powder
- 1 (8-ounce) tube crescent rolls
- 1/2 cup Italian-style breadcrumbs
For the cheese sauce:
- 1 tablespoon unsalted butter
- 1 tablespoon all-purpose flour
- 1/2 cup milk
- kosher salt to taste
- freshly ground black pepper to taste
- 1/2 cup cheddar cheese shredded
Directions
- Preheat the oven to 375 degrees F.
- Line a baking sheet with parchment paper.
- Heat the olive oil in a medium skillet over medium-high heat.
- Season the chicken breasts with the salt and pepper.
- Add the chicken breasts to the oil and cook, flipping once, until they reach an internal temperature of 165 degrees F, about 3-4 minutes per side.
- Let the chicken breasts cool and then shred them.
- In a large bowl, combine the shredded chicken, the cream cheese, the parmesan, the chives, the garlic powder, the salt, and the pepper.
- Separate the rolls into 8 triangles and top each with a heaping tablespoon of the chicken mixture.
- Starting with the wide end, roll the triangles up and tuck the ends of the dough underneath.
- Dredge the roll-ups in the breadcrumbs and press to coat them.
- Place the roll-ups, seam-side down, on the prepared baking sheet and bake until they are golden-brown, about 10-12 minutes.
- While the roll-ups bake, melt the butter in a small saucepan over medium-high heat.
- Whisk the flour into the butter until it has lightly browned, about 1 minute.
- Gradually whisk the milk into the butter mixture, and cook, whisking constantly, until it slightly thickens, about 3-4 minutes.
- Season the sauce mixture with the salt and pepper.
- Stir the cheese into the sauce mixture, a handful at a time, until the cheese has melted and the sauce is smooth, about 1-2 minutes.
- Serve the roll-ups drizzled with the cheese sauce.
