Ingredients

For the roll-ups:

  • 1 tablespoon olive oil
  • 1 chicken breast boneless and skinless
  • kosher salt to taste
  • freshly ground black pepper to taste
  • 1 (8-ounce) package cream cheese room temperature
  • 1/4 cup parmesan freshly grated
  • 2 tablespoons chives chopped
  • 1/2 teaspoon garlic powder
  • 1 (8-ounce) tube crescent rolls
  • 1/2 cup Italian-style breadcrumbs

For the cheese sauce:

  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1/2 cup milk
  • kosher salt to taste
  • freshly ground black pepper to taste
  • 1/2 cup cheddar cheese shredded

Directions

  • Preheat the oven to 375 degrees F.
  • Line a baking sheet with parchment paper.
  • Heat the olive oil in a medium skillet over medium-high heat.
  • Season the chicken breasts with the salt and pepper.
  • Add the chicken breasts to the oil and cook, flipping once, until they reach an internal temperature of 165 degrees F, about 3-4 minutes per side.
  • Let the chicken breasts cool and then shred them.
  • In a large bowl, combine the shredded chicken, the cream cheese, the parmesan, the chives, the garlic powder, the salt, and the pepper.
  • Separate the rolls into 8 triangles and top each with a heaping tablespoon of the chicken mixture.
  • Starting with the wide end, roll the triangles up and tuck the ends of the dough underneath.
  • Dredge the roll-ups in the breadcrumbs and press to coat them.
  • Place the roll-ups, seam-side down, on the prepared baking sheet and bake until they are golden-brown, about 10-12 minutes.
  • While the roll-ups bake, melt the butter in a small saucepan over medium-high heat.
  • Whisk the flour into the butter until it has lightly browned, about 1 minute.
  • Gradually whisk the milk into the butter mixture, and cook, whisking constantly, until it slightly thickens, about 3-4 minutes.
  • Season the sauce mixture with the salt and pepper.
  • Stir the cheese into the sauce mixture, a handful at a time, until the cheese has melted and the sauce is smooth, about 1-2 minutes.
  • Serve the roll-ups drizzled with the cheese sauce.
