Ingredients

  • 4 tablespoons butter softened, divided
  • 4 English muffins split and toasted
  • 4 slices Canadian bacon
  • 4 large eggs
  • 1/2 cup water
  • 4 slices American cheese

Directions

  • Using 1 tablespoon of the butter, evenly butter the cut-sides of the English muffins.
  • In a large skillet over medium-high heat, melt 2 tablespoons of the remaining butter.
  • Add the Canadian bacon slices to the melted butter and cook, flipping them once, until they are slightly browned and heated through, about 1-2 minutes per side.
  • Transfer 1 slice of the Canadian bacon to each of the English muffin bottom halves.
  • Add the remaining butter to the skillet and allow it to melt.
  • Coat four canning lids or egg rings with cooking spray.
  • Place the canning lids in the hot melted butter in the skillet.
  • Crack 1 of the eggs into each canning lid in the hot skillet.
  • Pour the water all around the canning lids and immediately cover the skillet.
  • Cook, covered, until the eggs are set, about 2-3 minutes.
  • Carefully remove the rings from the eggs; the rings will be very hot.
  • Transfer 1 of the cooked eggs on top of each of the Canadian bacon layers.
  • Top each of the eggs with 1 slice of the cheese, then close the sandwiches with the English muffin top halves.
  • Serve immediately.
