Hmmm, do these Golden Egg Sammies look somewhat familiar? Well, at least you won't need to visit any drive-thrus to enjoy these delicious breakfast sandwiches. Crisp yet fluffy English muffins sandwich a classic filling of fluffy eggs, succulent Canadian bacon, and melty cheese. No need for ketchup to enjoy Golden Egg Sammies — only a moment (literally) of your time and an empty stomach!

Ingredients

4 tablespoons butter softened, divided
4 English muffins split and toasted
4 slices Canadian bacon
4 large eggs
1/2 cup water
4 slices American cheese

Directions

Using 1 tablespoon of the butter, evenly butter the cut-sides of the English muffins.
In a large skillet over medium-high heat, melt 2 tablespoons of the remaining butter.
Add the Canadian bacon slices to the melted butter and cook, flipping them once, until they are slightly browned and heated through, about 1-2 minutes per side.
Transfer 1 slice of the Canadian bacon to each of the English muffin bottom halves.
Add the remaining butter to the skillet and allow it to melt.
Coat four canning lids or egg rings with cooking spray.
Place the canning lids in the hot melted butter in the skillet.
Crack 1 of the eggs into each canning lid in the hot skillet.
Pour the water all around the canning lids and immediately cover the skillet.
Cook, covered, until the eggs are set, about 2-3 minutes.
Carefully remove the rings from the eggs; the rings will be very hot.
Transfer 1 of the cooked eggs on top of each of the Canadian bacon layers.
Top each of the eggs with 1 slice of the cheese, then close the sandwiches with the English muffin top halves.
Serve immediately.
