Ingredients

For the vegan chickpea salad:

  • 1 (15-ounce) can chickpeas rinsed and drained
  • 1/4 cup Italian parsley chopped
  • 1/4 cup dill chopped
  • 2 tablespoons whole-grain mustard
  • 1-2 tablespoons vegan mayonnaise homemade or storebought, can substitute regular mayonnaise or 2-3 teaspoons olive oil
  • salt to taste
  • pepper to taste

For the sandwiches:

  • 1 tablespoon whole-grain mustard
  • 2 bagels halved, can substitute 4 slices whole-grain bread or sub wraps
  • 2 large lettuce leaves
  • 1 Turkish cucumber thinly sliced
  • 1 carrot thinly sliced
  • 4 radishes thinly sliced
  • 1 avocado sliced
  • sprouts such as alfalfa, sunflower, or daikon, to taste

Directions

  • Place the chickpeas, the parsley, the dill, 2 tablespoons of the mustard, the mayonnaise, the salt, and the pepper in a medium bowl.
  • Mash the chickpea mixture with a fork until well-combined
  • Taste the chickpea mixture for seasoning and adjust with the salt and the pepper accordingly.
  • Spread the remaining mustard on the bagel halves.
  • Top 2 of the bagel halves with the lettuce and a generous amount of the chickpea salad.
  • Layer the cucumber, the carrot, the radishes, and the avocado onto the sandwiches.
  • Top each sandwich with the sprouts and the remaining bagel halves.
  • Cut the sandwiches in half and serve.
