Ingredients
For the vegan chickpea salad:
- 1 (15-ounce) can chickpeas rinsed and drained
- 1/4 cup Italian parsley chopped
- 1/4 cup dill chopped
- 2 tablespoons whole-grain mustard
- 1-2 tablespoons vegan mayonnaise homemade or storebought, can substitute regular mayonnaise or 2-3 teaspoons olive oil
- salt to taste
- pepper to taste
For the sandwiches:
- 1 tablespoon whole-grain mustard
- 2 bagels halved, can substitute 4 slices whole-grain bread or sub wraps
- 2 large lettuce leaves
- 1 Turkish cucumber thinly sliced
- 1 carrot thinly sliced
- 4 radishes thinly sliced
- 1 avocado sliced
- sprouts such as alfalfa, sunflower, or daikon, to taste
Directions
- Place the chickpeas, the parsley, the dill, 2 tablespoons of the mustard, the mayonnaise, the salt, and the pepper in a medium bowl.
- Mash the chickpea mixture with a fork until well-combined
- Taste the chickpea mixture for seasoning and adjust with the salt and the pepper accordingly.
- Spread the remaining mustard on the bagel halves.
- Top 2 of the bagel halves with the lettuce and a generous amount of the chickpea salad.
- Layer the cucumber, the carrot, the radishes, and the avocado onto the sandwiches.
- Top each sandwich with the sprouts and the remaining bagel halves.
- Cut the sandwiches in half and serve.
