Ingredients

For the vegan chickpea salad:

1 (15-ounce) can chickpeas rinsed and drained
1/4 cup Italian parsley chopped
1/4 cup dill chopped
2 tablespoons whole-grain mustard
1-2 tablespoons vegan mayonnaise homemade or storebought, can substitute regular mayonnaise or 2-3 teaspoons olive oil
salt to taste
pepper to taste

For the sandwiches:

1 tablespoon whole-grain mustard
2 bagels halved, can substitute 4 slices whole-grain bread or sub wraps
2 large lettuce leaves
1 Turkish cucumber thinly sliced
1 carrot thinly sliced
4 radishes thinly sliced
1 avocado sliced
sprouts such as alfalfa, sunflower, or daikon, to taste

Directions

Place the chickpeas, the parsley, the dill, 2 tablespoons of the mustard, the mayonnaise, the salt, and the pepper in a medium bowl.
Mash the chickpea mixture with a fork until well-combined
Taste the chickpea mixture for seasoning and adjust with the salt and the pepper accordingly.
Spread the remaining mustard on the bagel halves.
Top 2 of the bagel halves with the lettuce and a generous amount of the chickpea salad.
Layer the cucumber, the carrot, the radishes, and the avocado onto the sandwiches.
Top each sandwich with the sprouts and the remaining bagel halves.
Cut the sandwiches in half and serve.
