Ingredients
- 1 large sweet potato scrubbed
- 3/4 cup kale washed and chopped, allowing water to cling to the kale
- 1 cup canned black beans rinsed
- 2 tablespoons water plus more to taste, divided
- 1/4 cup hummus
Directions
- Prick the sweet potato all over with a fork.
- Microwave the sweet potato on high until it is cooked through, about 7-10 minutes.
- In a medium saucepan over medium-high heat add the kale and cook, covered and stirring once or twice, until it is wilted, about 2 minutes.
- Add the beans and some water to the saucepan, adding sooner than the 2-minute mark if the pan becomes dry.
- Continue cooking the kale mixture, uncovered, until it is steaming hot, about 1-2 minutes.
- Split the sweet potato open and top with the kale mixture.
- Combine the hummus and 2 tablespoons of the water in a small dish.
- Drizzle the hummus dressing over the stuffed sweet potato.
- Serve.
