Ingredients
- 1 (5-pound) beef tenderloin tied with kitchen string
- 4 tablespoons unsalted butter
- 1 tablespoon Dijon mustard
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1 tablespoon fresh rosemary finely chopped
- 1 tablespoon fresh sage finely chopped
- 1 tablespoon fresh thyme finely chopped
Directions
- Remove the tenderloin from the refrigerator and let it rest at room temperature for 1 hour.
- Preheat the oven to 425 degrees F.
- Set a rack inside of a baking sheet.
- In a small bowl, combine the butter and the Dijon mustard and mix it well.
- Rub all sides of the tenderloin with the butter mixture.
- In a small bowl, combine the salt, the pepper, the rosemary, the sage, and the thyme.
- Sprinkle the spice mixture evenly over the tenderloin and press the spice mixture into the butter mixture.
- Place the tenderloin onto the prepared rack and roast for 30 minutes.
- Lower the oven temperature to 350 degrees F and continue roasting the tenderloin until a thermometer inserted into the center of it reads at least 135 degrees F, about 5-10 minutes.
- Transfer the tenderloin from the oven and let it rest for 30 minutes.
- Slice the tenderloin and serve.
