Ingredients

  • 1 (5-pound) beef tenderloin tied with kitchen string
  • 4 tablespoons unsalted butter
  • 1 tablespoon Dijon mustard
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon fresh rosemary finely chopped
  • 1 tablespoon fresh sage finely chopped
  • 1 tablespoon fresh thyme finely chopped

Directions

  • Remove the tenderloin from the refrigerator and let it rest at room temperature for 1 hour.
  • Preheat the oven to 425 degrees F.
  • Set a rack inside of a baking sheet.
  • In a small bowl, combine the butter and the Dijon mustard and mix it well.
  • Rub all sides of the tenderloin with the butter mixture.
  • In a small bowl, combine the salt, the pepper, the rosemary, the sage, and the thyme.
  • Sprinkle the spice mixture evenly over the tenderloin and press the spice mixture into the butter mixture.
  • Place the tenderloin onto the prepared rack and roast for 30 minutes.
  • Lower the oven temperature to 350 degrees F and continue roasting the tenderloin until a thermometer inserted into the center of it reads at least 135 degrees F, about 5-10 minutes.
  • Transfer the tenderloin from the oven and let it rest for 30 minutes.
  • Slice the tenderloin and serve.
