Hitched Casserole wants to capture even a fraction of that energy, which it does by being genuinely delicious! Savory Italian sausage, fire-roasted corn and tomatoes for an extra touch of brightness, chili powder and hot sauce for a little heat.... every bite is like newly wedded bliss for your tastebuds! Throw on a dress of melty cheese and Hitched Casserole is ready to take the leap!
Ingredients
- 1 pound mild Italian sausage
- 1 cup yellow onion, chopped
- 1 pound baby or petite red potatoes, thinly sliced
- 1 green bell pepper, chopped
- 1 (15-ounce) can fire-roasted corn, drained
- 1 (15-ounce) can dark red kidney beans, drained and rinsed
- 1 (14.5-ounce) can fire-roasted diced tomatoes, undrained
- 2 teaspoons garlic, minced
- 1 1/4 teaspoons hot sauce
- 1/2 cup low-sodium beef broth
- 1/2 teaspoon chili powder
- fine sea salt, to taste
- cracked black pepper, to taste
- garlic salt, to taste
- onion powder, to taste
- 1 cup Colby Jack cheese, finely grated
- cilantro, optional, to taste, for topping
- sour cream, optional, to taste, for topping
Directions
Step 1 -In a large skillet over medium-high heat, cook the sausage and the chopped onion until the meat is no longer pink, about 6-8 minutes. Drain the excess fat.
Step 2 -Add the sausage mixture to a 6-quart slow cooker.
Step 3 -Top the sausage mixture with the red potatoes.
Step 4 -Add the bell pepper, the corn, the kidney beans, the diced tomatoes and their juices, the minced garlic, the hot sauce, the beef broth, and the chili powder to the slow cooker.
Step 5 -Season the mixture to taste with the salt and the black pepper.
Step 6 -Stir everything together, then cover the slow cooker and cook until the potatoes are tender, about 3-5 hours on high and 5-7 hours on low.
Step 7 -Taste the mixture for seasoning and add the garlic salt and the onion powder to taste.
Step 8 -Add the freshly grated cheese over the mixture and allow it to melt.
Step 9 -Serve hot with the cilantro and the sour cream.
