Ingredients
- 1 pound mild Italian sausage
- 1 cup yellow onion chopped
- 1 pound baby or petite red potatoes thinly sliced
- 1 green bell pepper chopped
- 1 (15-ounce) can fire-roasted corn drained
- 1 (15-ounce) can dark red kidney beans drained and rinsed
- 1 (14.5-ounce) can fire-roasted diced tomatoes undrained
- 2 teaspoons garlic minced
- 1 1/4 teaspoons hot sauce
- 1/2 cup low-sodium beef broth
- 1/2 teaspoon chili powder
- fine sea salt to taste
- cracked black pepper to taste
- garlic salt to taste
- onion powder to taste
- 1 cup Colby Jack cheese finely grated
- cilantro optional, to taste, for topping
- sour cream optional, to taste, for topping
Directions
- In a large skillet over medium-high heat, cook the sausage and the chopped onion until the meat is no longer pink, about 6-8 minutes. Drain the excess fat.
- Add the sausage mixture to a 6-quart slow cooker.
- Top the sausage mixture with the red potatoes.
- Add the bell pepper, the corn, the kidney beans, the diced tomatoes and their juices, the minced garlic, the hot sauce, the beef broth, and the chili powder to the slow cooker.
- Season the mixture to taste with the salt and the black pepper.
- Stir everything together, then cover the slow cooker and cook until the potatoes are tender, about 3-5 hours on high and 5-7 hours on low.
- Taste the mixture for seasoning and add the garlic salt and the onion powder to taste.
- Add the freshly grated cheese over the mixture and allow it to melt.
- Serve hot with the cilantro and the sour cream.
