Ingredients

  • 6 cups potatoes diced
  • 1 (9-inch) deep dish pie pastry
  • 1/4 cup butter
  • 1 large onion diced
  • 2 leeks washed extremely thoroughly and chopped
  • 5 cloves garlic minced
  • 2 teaspoons fresh thyme minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3/4 cup heavy cream
  • 8 ounces cheddar cheese shredded

Directions

  • Boil a large pot of salted water.
  • Boil the potatoes in the salted water until just tender, about 5 minutes.
  • Drain the potatoes.
  • Preheat the oven to 375 degrees F.
  • Pierce the pie pastry on the bottom and on the sides with a fork several times.
  • Melt the butter in a large saucepan over medium heat.
  • Sauté the onions and the leeks in the melted butter until slightly caramelized, about 10 minutes.
  • Add the garlic and cook until fragrant, about 3 minutes.
  • Transfer the saucepan from the heat.
  • Add the thyme, the salt, the pepper, and the cream to the onion mixture, mixing well.
  • Add the potatoes and 1/2 of the cheese to the onion mixture, gently folding them to combine.
  • Spoon the potato mixture into the pie pastry and top it with the remaining cheese.
  • Bake until the cheese is just starting to brown, about 25-30 minutes.
  • Let the pie rest for 10 minutes.
  • Serve.
