Ingredients
- 6 cups potatoes diced
- 1 (9-inch) deep dish pie pastry
- 1/4 cup butter
- 1 large onion diced
- 2 leeks washed extremely thoroughly and chopped
- 5 cloves garlic minced
- 2 teaspoons fresh thyme minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 3/4 cup heavy cream
- 8 ounces cheddar cheese shredded
Directions
- Boil a large pot of salted water.
- Boil the potatoes in the salted water until just tender, about 5 minutes.
- Drain the potatoes.
- Preheat the oven to 375 degrees F.
- Pierce the pie pastry on the bottom and on the sides with a fork several times.
- Melt the butter in a large saucepan over medium heat.
- Sauté the onions and the leeks in the melted butter until slightly caramelized, about 10 minutes.
- Add the garlic and cook until fragrant, about 3 minutes.
- Transfer the saucepan from the heat.
- Add the thyme, the salt, the pepper, and the cream to the onion mixture, mixing well.
- Add the potatoes and 1/2 of the cheese to the onion mixture, gently folding them to combine.
- Spoon the potato mixture into the pie pastry and top it with the remaining cheese.
- Bake until the cheese is just starting to brown, about 25-30 minutes.
- Let the pie rest for 10 minutes.
- Serve.
