Ingredients

For the caramelized onions:

  • 2 tablespoons extra-virgin olive oil
  • 4 medium yellow onions halved then sliced
  • 1/2 teaspoon sea salt

For the dip:

  • 1 (8-ounce) container sour cream
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • freshly ground black pepper to taste
  • 2 tablespoons chives optional, to taste, chopped, for topping
  • potato chips optional, to taste, for serving

Directions

  • In a 12-inch cast-iron skillet over medium heat, add the oil.
  • Add the onions to the hot oil and cook, while stirring, until they begin to soften, about 5 minutes.
  • Add 1/2 teaspoon of the salt to the onions.
  • Reduce the heat to medium-low.
  • Cook the onions, while stirring them every few minutes, until the onions are very soft, golden-brown, and caramelized, about 50 minutes-1 hour 20 minutes.
  • In a small bowl, add the sour cream, 1/2 cup of the caramelized onions, the onion powder, the remaining salt, and the black pepper and stir to combine. Reserve any remaining caramelized onions for a separate use or add as a garnish on top of the dip.
  • Cover the dip and allow it to chill in the refrigerator for at least 1 hour.
  • Top the dip with the chives.
  • Serve with the potato chips.
