Ingredients
For the caramelized onions:
- 2 tablespoons extra-virgin olive oil
- 4 medium yellow onions halved then sliced
- 1/2 teaspoon sea salt
For the dip:
- 1 (8-ounce) container sour cream
- 1/4 teaspoon onion powder
- 1/2 teaspoon sea salt
- freshly ground black pepper to taste
- 2 tablespoons chives optional, to taste, chopped, for topping
- potato chips optional, to taste, for serving
Directions
- In a 12-inch cast-iron skillet over medium heat, add the oil.
- Add the onions to the hot oil and cook, while stirring, until they begin to soften, about 5 minutes.
- Add 1/2 teaspoon of the salt to the onions.
- Reduce the heat to medium-low.
- Cook the onions, while stirring them every few minutes, until the onions are very soft, golden-brown, and caramelized, about 50 minutes-1 hour 20 minutes.
- In a small bowl, add the sour cream, 1/2 cup of the caramelized onions, the onion powder, the remaining salt, and the black pepper and stir to combine. Reserve any remaining caramelized onions for a separate use or add as a garnish on top of the dip.
- Cover the dip and allow it to chill in the refrigerator for at least 1 hour.
- Top the dip with the chives.
- Serve with the potato chips.
