Nothing says Sunday like a sit-down, get-caught-up-and-rest meal! This Italian Sausage Bake encompasses all the homey flavors you love on a Sunday, or any day, in one outstanding dish. Perfectly seasoned Italian sausages, fork-tender potatoes, a flavor-fest of peppers, and fragrant, softened onions all seasoned to perfection and so very easy to get addicted to! Everyone will be gathering around for this Italian Sausage Bake, each and every time. Relax and sit for a spell.
Ingredients
- 2 teaspoons plus 1/4 cup olive oil, divided
- 2 pounds Italian sausage links, cut into 2-inch pieces
- 4 large potatoes, peeled and thickly sliced
- 2 large green bell peppers, seeded and cut into wedges
- 2 large red bell peppers, seeded and cut into wedges
- 3 large onions, cut into wedges
- 1/2 cup white wine
- 1/2 cup chicken stock
- 1 teaspoon Italian seasoning
- salt, to taste
- freshly ground black pepper, to taste
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -In a large skillet over medium heat, add 2 teaspoons of the olive oil.
Step 3 -Add the sausage pieces to the olive oil and cook, stirring frequently, until browned, about 5-10 minutes.
Step 4 -Transfer the cooked sausage pieces to a 9x13-inch baking dish.
Step 5 -In the same large skillet, add the remaining olive oil and the sliced potatoes, stirring frequently, until browned, about 10 minutes.
Step 6 -Transfer the cooked potatoes to the top of the cooked sausage pieces, leaving some oil in the skillet.
Step 7 -In the same skillet, add the green peppers, the red peppers, and the onions, stirring frequently, and cook until all of the vegetables begin to soften, about 5 minutes.
Step 8 -Transfer the cooked vegetable mixture to the top of the cooked potatoes.
Step 9 -Add the white wine and the chicken stock over top of the vegetable-sausage mixture.
Step 10 -Evenly sprinkle the Italian seasoning, the salt, and the black pepper over the vegetable-sausage mixture.
Step 11 -Gently stir the vegetable-sausage mixture to combine.
Step 12 -Transfer the vegetable-sausage mixture to the oven and bake until hot and bubbling, about 20-25 minutes.
Step 13 -Plate and serve.
