Ingredients
For the cookies:
- 1 stick unsalted butter melted
- 3/4 cup brown sugar
- 2 tablespoons maple syrup optional
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/2 cup whole-wheat flour
- 3/4 cup rolled oats
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup apples peeled and finely chopped
- 1 tablespoon lemon juice
For the white chocolate drizzle:
- 1/3 cup white chocolate chips
- 1 teaspoon coconut oil
Directions
- Preheat the oven to 350 degrees F.
- In a large bowl, add the melted butter, the brown sugar, the maple syrup, the egg, and the vanilla extract and whisk to combine until smooth.
- In a separate bowl, add the all-purpose flour, the whole-wheat flour, the rolled oats, the cinnamon, the baking soda, and the salt and whisk to combine.
- Add the flour mixture to the butter mixture and mix just until combined into a cookie dough.
- In a bowl, add the apples and the lemon juice and toss lightly to coat.
- Allow the apples to soak for 2-3 minutes.
- Drain the apples, then add them to the cookie dough and fold to combine.
- Spoon the cookie dough onto a baking sheet, forming 12 evenly-sized balls.
- Bake until the cookies are just set, about 12-14 minutes.
- Allow the cookies to cool slightly.
- In a microwave-safe bowl, add the white chocolate and the coconut oil and microwave in 20-second increments, while stirring in between increments, until melted and smooth, about 1 minute.
- Drizzle the white chocolate mixture over the cookies.
- Serve.
