Ingredients

For the cookies:

1 stick unsalted butter melted
3/4 cup brown sugar
2 tablespoons maple syrup optional
1 large egg
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 cup whole-wheat flour
3/4 cup rolled oats
2 teaspoons cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
1 cup apples peeled and finely chopped
1 tablespoon lemon juice

For the white chocolate drizzle:

1/3 cup white chocolate chips
1 teaspoon coconut oil

Directions

Preheat the oven to 350 degrees F.
In a large bowl, add the melted butter, the brown sugar, the maple syrup, the egg, and the vanilla extract and whisk to combine until smooth.
In a separate bowl, add the all-purpose flour, the whole-wheat flour, the rolled oats, the cinnamon, the baking soda, and the salt and whisk to combine.
Add the flour mixture to the butter mixture and mix just until combined into a cookie dough.
In a bowl, add the apples and the lemon juice and toss lightly to coat.
Allow the apples to soak for 2-3 minutes.
Drain the apples, then add them to the cookie dough and fold to combine.
Spoon the cookie dough onto a baking sheet, forming 12 evenly-sized balls.
Bake until the cookies are just set, about 12-14 minutes.
Allow the cookies to cool slightly.
In a microwave-safe bowl, add the white chocolate and the coconut oil and microwave in 20-second increments, while stirring in between increments, until melted and smooth, about 1 minute.
Drizzle the white chocolate mixture over the cookies.
Serve.
