Ingredients

  • 1 large egg lightly beaten
  • 3/4 cup diced canned tomatoes drained
  • 1/2 cup tortilla chips crushed
  • 1/4 cup cheddar cheese shredded
  • 1/4 cup salsa
  • 2 tablespoons taco seasoning
  • 2 tablespoons onion diced
  • 2 tablespoons ripe avocado diced
  • 1/8 teaspoon pepper
  • 1/2 pound lean ground beef

Directions

  • Preheat the oven to 350 degrees F.
  • In a bowl, combine the egg, the tomatoes, the tortilla chips, the cheddar, the salsa, the taco seasoning, the onions, the avocado, and the pepper.
  • Crumble the beef over the mixture and mix until well-combined.
  • Shape the meat mixture into 2 equal loaves.
  • Place the loaves onto an ungreased 8-inch baking dish.
  • Bake until the meat is no longer pink and a thermometer inserted into the thickest part reads 160 degrees F, about 30-40 minutes.
  • Serve hot.
