Ingredients
- 1 large egg lightly beaten
- 3/4 cup diced canned tomatoes drained
- 1/2 cup tortilla chips crushed
- 1/4 cup cheddar cheese shredded
- 1/4 cup salsa
- 2 tablespoons taco seasoning
- 2 tablespoons onion diced
- 2 tablespoons ripe avocado diced
- 1/8 teaspoon pepper
- 1/2 pound lean ground beef
Directions
- Preheat the oven to 350 degrees F.
- In a bowl, combine the egg, the tomatoes, the tortilla chips, the cheddar, the salsa, the taco seasoning, the onions, the avocado, and the pepper.
- Crumble the beef over the mixture and mix until well-combined.
- Shape the meat mixture into 2 equal loaves.
- Place the loaves onto an ungreased 8-inch baking dish.
- Bake until the meat is no longer pink and a thermometer inserted into the thickest part reads 160 degrees F, about 30-40 minutes.
- Serve hot.
