Ingredients

For the streusel topping:

  • 2/3 cup light brown sugar packed
  • 2/3 cup all-purpose flour spooned and leveled
  • 2 cups cinnamon-sugar cereal crushed
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter melted

For the casserole:

  • 1 loaf French bread sourdough, or challah
  • 8 large eggs
  • 2 1/4 cups whole milk
  • 1 teaspoon ground cinnamon
  • 1/2 cup light brown sugar packed
  • 1 tablespoon vanilla extract

Directions

  • Line a baking sheet with parchment paper.
  • In a large bowl, combine the 2/3 cup of the light brown sugar, the flour, the cereal, 1 teaspoon of the cinnamon, and the butter using a rubber spatula. The mixture should become wet and gritty.
  • Pour the streusel mixture onto the prepared baking sheet to dry slightly.
  • Spray a 9x13-inch pan with nonstick spray.
  • Slice and cube the bread into 1-inch pieces.
  • Spread the bread cubes in the prepared baking pan.
  • Whisk the eggs, the milk, the remaining cinnamon, the remaining brown sugar, and the vanilla together until no lumps remain.
  • Pour the milk mixture over the bread.
  • Cover the pan with plastic wrap and chill in the refrigerator for at least 3 hours and up to overnight.
  • Preheat the oven to 350 degrees F.
  • Transfer the pan from the refrigerator and discard the plastic wrap.
  • Sprinkle the streusel topping on top of the casserole.
  • Bake until golden-brown on top, about 45-55 minutes.
  • Serve.
