Ingredients
- 1 (2.5-3-pound) spaghetti squash cooked and halved
- 1 cup sharp cheddar cheese grated, divided
- 2 cups cottage cheese
- 3 large eggs
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 3 cups broccoli florets
- 2 tablespoons water
Directions
- Arrange a rack in the middle of the oven.
- Preheat the oven to 350 degrees F.
- Scrape the strands out from the inside of the cooked spaghetti squash using a fork, placing them into a bowl.
- Add 1/2 cup of the cheddar cheese, the cottage cheese, the eggs, the salt, and the pepper to a large bowl and stir to combine.
- In a large, ovenproof skillet over medium-high heat, add the broccoli and the water and cook, stirring occasionally, until the broccoli is crisp-tender and the water has evaporated, about 2-3 minutes. Transfer the skillet away from the heat.
- Add the spaghetti squash and the cheese mixture to the broccoli mixture and stir until they are combined.
- Smooth the top of the mixture into an even layer, then sprinkle with the remaining cheddar cheese.
- Bake until the casserole is set and a thin knife inserted into the center comes out clean, about 1 hour.
- Plate and serve.
