Ingredients

  • 1 (2.5-3-pound) spaghetti squash cooked and halved
  • 1 cup sharp cheddar cheese grated, divided
  • 2 cups cottage cheese
  • 3 large eggs
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 cups broccoli florets
  • 2 tablespoons water

Directions

  • Arrange a rack in the middle of the oven.
  • Preheat the oven to 350 degrees F.
  • Scrape the strands out from the inside of the cooked spaghetti squash using a fork, placing them into a bowl.
  • Add 1/2 cup of the cheddar cheese, the cottage cheese, the eggs, the salt, and the pepper to a large bowl and stir to combine.
  • In a large, ovenproof skillet over medium-high heat, add the broccoli and the water and cook, stirring occasionally, until the broccoli is crisp-tender and the water has evaporated, about 2-3 minutes. Transfer the skillet away from the heat.
  • Add the spaghetti squash and the cheese mixture to the broccoli mixture and stir until they are combined.
  • Smooth the top of the mixture into an even layer, then sprinkle with the remaining cheddar cheese.
  • Bake until the casserole is set and a thin knife inserted into the center comes out clean, about 1 hour.
  • Plate and serve.
