Ingredients
- 1 (12-ounce) package smoked sausage cut into 1-slices
- 3 pounds baby potatoes sliced in half
- 1 green bell pepper cut into 1-inch pieces
- 1 yellow bell pepper cut into 1-inch pieces
- 1 red or orange bell pepper cut into 1-inch pieces
- 1 medium onion sliced
- 2 teaspoons garlic minced
- 1/4 cup chicken stock
- 1 tablespoon olive oil
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- salt to taste
- pepper to taste
Directions
- Preheat the oven to 400 degrees F.
- Combine the sausage, the potatoes, the bell peppers, the onion, the garlic, the chicken stock, the olive oil, the rosemary, the thyme, the salt, and the pepper together in a large bowl, stirring well to make sure everything is coated.
- Pour the mixture into a large cast-iron pan or a 9x13-inch baking dish.
