Just take a bite and you'll agree — this is One Good Shrimp Pasta! The shrimp is pink, sweet, and savory, and when it's paired with wilted kale, spicy chiles, and tender pasta? Good times are sure to be had! Of course, everything coated in an extra-tangy soy-lime sauce doesn't hurt either! One Good Shrimp Pasta is more than good! It's brilliantly delicious!
Ingredients
- 3 ounces linguine
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon chili garlic sauce
- 1/2 teaspoon fish sauce
- 1/2 teaspoon rice wine vinegar
- 1 tablespoon fresh lime juice
- 1 teaspoon olive oil, divided
- 1 clove garlic, minced
- 1 red Thai chile pepper, optional, minced
- 1 cup kale, stems removed, thinly sliced
- 4 ounces shrimp, peeled and deveined
- freshly ground black pepper, to taste
- 1/2 teaspoon sesame seeds, for serving
- lime wedges, optional, to taste, for serving
Directions
Step 1 -In a large pot of salted, boiling water, add the pasta and cook until it is al dente, according to package directions.
Step 2 -Reserve 1/4 cup of the pasta water, draining the remainder.
Step 3 -In a small bowl, add the soy sauce, the sesame oil, the chili garlic sauce, the fish sauce, the rice wine vinegar, and the lime juice and whisk to combine.
Step 4 -In a nonstick pan over medium heat, add 1/2 teaspoon of the olive oil.
Step 5 -Add the garlic and the red Thai chile pepper to the hot oil and cook, while stirring often, until fragrant, about 1 minute.
Step 6 -Add the kale to the garlic mixture and cook, while stirring occasionally, until wilted, about 2 minutes.
Step 7 -Transfer the kale mixture to a clean plate.
Step 8 -In the same pan over medium heat, add the remaining olive oil.
Step 9 -Add the shrimp to the hot oil and cook, turning them halfway through, until the shrimp reach an internal temperature of 145 degrees F, about 3 minutes.
Step 10 -Transfer the cooked shrimp to a clean plate.
Step 11 -In the same pan over medium heat, add the soy sauce mixture, the reserved pasta water, and the black pepper and stir to combine.
Step 12 -Cook the sauce mixture until heated through and combined, about 2 minutes.
Step 13 -Add the pasta mixture, the kale mixture, and the shrimp to the sauce mixture and stir until well-combined.
Step 14 -Transfer the shrimp mixture to a serving bowl.
Step 15 -Sprinkle the shrimp mixture with the sesame seeds.
Step 16 -Squeeze the lime wedge over the shrimp mixture and serve.
