Ingredients
- 3 ounces linguine
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon chili garlic sauce
- 1/2 teaspoon fish sauce
- 1/2 teaspoon rice wine vinegar
- 1 tablespoon fresh lime juice
- 1 teaspoon olive oil divided
- 1 clove garlic minced
- 1 red Thai chile pepper optional, minced
- 1 cup kale stems removed, thinly sliced
- 4 ounces shrimp peeled and deveined
- freshly ground black pepper to taste
- 1/2 teaspoon sesame seeds for serving
- lime wedges optional, to taste, for serving
Directions
- In a large pot of salted, boiling water, add the pasta and cook until it is al dente, according to package directions.
- Reserve 1/4 cup of the pasta water, draining the remainder.
- In a small bowl, add the soy sauce, the sesame oil, the chili garlic sauce, the fish sauce, the rice wine vinegar, and the lime juice and whisk to combine.
- In a nonstick pan over medium heat, add 1/2 teaspoon of the olive oil.
- Add the garlic and the red Thai chile pepper to the hot oil and cook, while stirring often, until fragrant, about 1 minute.
- Add the kale to the garlic mixture and cook, while stirring occasionally, until wilted, about 2 minutes.
- Transfer the kale mixture to a clean plate.
- In the same pan over medium heat, add the remaining olive oil.
- Add the shrimp to the hot oil and cook, turning them halfway through, until the shrimp reach an internal temperature of 145 degrees F, about 3 minutes.
- Transfer the cooked shrimp to a clean plate.
- In the same pan over medium heat, add the soy sauce mixture, the reserved pasta water, and the black pepper and stir to combine.
- Cook the sauce mixture until heated through and combined, about 2 minutes.
- Add the pasta mixture, the kale mixture, and the shrimp to the sauce mixture and stir until well-combined.
- Transfer the shrimp mixture to a serving bowl.
- Sprinkle the shrimp mixture with the sesame seeds.
- Squeeze the lime wedge over the shrimp mixture and serve.
