Ingredients

  • 1 tablespoon olive oil plus more for the baking sheet
  • 3/4 cup unsalted peanuts
  • 3 slices white sandwich bread torn into small pieces
  • 1 1/2 teaspoons coarse salt plus more to taste
  • 1/4 teaspoon ground pepper to taste
  • 2 eggs large
  • 4 chicken breast halves boneless and skinless

Directions

  • Preheat the oven to 475 degrees F.
  • Line a baking tray with foil and brush lightly with olive oil, then set it aside.
  • Using a food processor, pulse the peanuts and bread together until it is coarsely ground.
  • Transfer the processed mixture to a wide-rimmed mixing bowl.
  • Mix in the olive oil, about 1 1/2 teaspoons of the salt, and 1/4 teaspoon of the pepper.
  • Using a large mixing bowl, whisk in the eggs, and season generously with salt and pepper.
  • Add the chicken breast halves to the egg mixture, turning to coat each of the sides.
  • Doing one at a time, dredge the chicken halves in the peanut breading, lightly pressing it onto the chicken.
  • Transfer the breaded chicken to the prepared baking tray.
  • Bake the breaded chicken until it is lightly browned and golden, about 15 minutes.
  • Check the internal temperature of the chicken to make sure the internal temperature is 165 degrees F.
  • Serve!
