Ingredients
- 1 tablespoon olive oil plus more for the baking sheet
- 3/4 cup unsalted peanuts
- 3 slices white sandwich bread torn into small pieces
- 1 1/2 teaspoons coarse salt plus more to taste
- 1/4 teaspoon ground pepper to taste
- 2 eggs large
- 4 chicken breast halves boneless and skinless
Directions
- Preheat the oven to 475 degrees F.
- Line a baking tray with foil and brush lightly with olive oil, then set it aside.
- Using a food processor, pulse the peanuts and bread together until it is coarsely ground.
- Transfer the processed mixture to a wide-rimmed mixing bowl.
- Mix in the olive oil, about 1 1/2 teaspoons of the salt, and 1/4 teaspoon of the pepper.
- Using a large mixing bowl, whisk in the eggs, and season generously with salt and pepper.
- Add the chicken breast halves to the egg mixture, turning to coat each of the sides.
- Doing one at a time, dredge the chicken halves in the peanut breading, lightly pressing it onto the chicken.
- Transfer the breaded chicken to the prepared baking tray.
- Bake the breaded chicken until it is lightly browned and golden, about 15 minutes.
- Check the internal temperature of the chicken to make sure the internal temperature is 165 degrees F.
