Ingredients

  • 8 ounces angel hair pasta
  • 2 cups chicken cooked and chopped
  • 2 (10.5-ounce) cans cream of chicken soup
  • 1 cup salsa
  • 1 cup sour cream
  • 2 cups Mexican cheese blend shredded, divided
  • 1 tablespoon taco seasoning
  • dried parsley optional, to taste, for topping

Directions

  • Preheat the oven to 350 degrees F.
  • Spray a 9x13-inch baking dish with nonstick cooking spray.
  • Cook the angel hair pasta to al dente, according to the package directions.
  • Drain the pasta well.
  • Place the drained angel hair, the chicken, the cream of chicken soup, the salsa, the sour cream, 1 cup of the Mexican cheese, and the taco seasoning in the pot used to cook the pasta and stir well to combine.
  • Pour the pasta mixture into the prepared baking dish.
  • Top with the remaining cheese and the parsley.
  • Cover and bake until the casserole is hot and bubbly, about 25 minutes.
  • Serve.
