Ingredients

  • 8-10 large lemons should equal about 2 cups
  • 8 cups filtered cold water divided
  • 2 cups granulated sugar
  • pure beet juice (not from concentrate) to taste
  • fresh mint leaves to taste, for garnish
  • lemon slices to taste, for garnish

Directions

  • Juice the lemons through a strainer into a medium bowl to remove the pulp and seeds.
  • In a pot over medium-high heat, add 2 cups of the water and the sugar and heat, while stirring, until the sugar dissolves.
  • Pour the simple syrup into a pitcher.
  • Add the lemon juice to the simple syrup and stir to combine.
  • Slowly add the remaining water to the lemon mixture, tasting occasionally until the desired sweetness level is reached.
  • Slowly stir the beet juice, one drop at a time, into the lemonade until the desired shade of pink is reached. The pure beet juice in this small amount is tasteless, so it is only used to add color.
  • Refrigerate the lemonade until thoroughly chilled, about 1 hour.
  • Pour the lemonade into glasses and garnish with the mint leaves and the lemon slices.
  • Serve.
