Ingredients

8-10 large lemons should equal about 2 cups
8 cups filtered cold water divided
2 cups granulated sugar
pure beet juice (not from concentrate) to taste
fresh mint leaves to taste, for garnish
lemon slices to taste, for garnish

Directions

Juice the lemons through a strainer into a medium bowl to remove the pulp and seeds.
In a pot over medium-high heat, add 2 cups of the water and the sugar and heat, while stirring, until the sugar dissolves.
Pour the simple syrup into a pitcher.
Add the lemon juice to the simple syrup and stir to combine.
Slowly add the remaining water to the lemon mixture, tasting occasionally until the desired sweetness level is reached.
Slowly stir the beet juice, one drop at a time, into the lemonade until the desired shade of pink is reached. The pure beet juice in this small amount is tasteless, so it is only used to add color.
Refrigerate the lemonade until thoroughly chilled, about 1 hour.
Pour the lemonade into glasses and garnish with the mint leaves and the lemon slices.
Serve.
