Ingredients
- 4 chicken breasts boneless and skinless
- kosher salt to taste
- black pepper to taste
- 4 ounces cream cheese room temperature
- 1/3 cup mayonnaise
- 1 cup sharp cheddar cheese freshly grated
- 4 strips bacon cooked and crumbled
- 1/2 cup slivered almonds lightly toasted
- 1/8 teaspoon garlic powder
- 4 green onions thinly sliced, divided
Directions
- Place a large baking sheet on the middle rack of the oven.
- Preheat the oven to 400 degrees F.
- Tear a large piece of parchment paper and set it aside.
- In a large, resealable plastic bag, add 1 of the chicken breasts.
- Squeeze the air of the bag and seal it.
- Using a rolling pin or a meat mallet, pound the chicken breast in the bag to 1/2-inch-thickness.
- Transfer the flattened chicken from the bag and repeating the flattening process with the remaining chicken breasts.
- Season the flattened chicken breasts evenly with the salt and the black pepper.
- Transfer the flattened chicken breasts to the prepared piece of parchment paper, spreading them out evenly.
- In a large bowl, add the cream cheese and the mayonnaise and use a large spoon or spatula to stir until smooth.
- Add the cheddar cheese, the bacon, the almonds, the garlic powder, and 1/2 of the green onions to the cream cheese mixture and stir to combine.
- Spread the cream cheese mixture evenly over the tops of the chicken breasts.
- Carefully transfer the parchment paper with the chicken breasts to the hot baking sheet.
- Bake until the cheese is melted and the chicken reaches an internal temperature of 165 degrees F, about 10-15 minutes.
- Allow the chicken to rest for 5 minutes.
- Serve garnished with the remaining green onions.
