Ingredients

  • 4 chicken breasts boneless and skinless
  • kosher salt to taste
  • black pepper to taste
  • 4 ounces cream cheese room temperature
  • 1/3 cup mayonnaise
  • 1 cup sharp cheddar cheese freshly grated
  • 4 strips bacon cooked and crumbled
  • 1/2 cup slivered almonds lightly toasted
  • 1/8 teaspoon garlic powder
  • 4 green onions thinly sliced, divided

Directions

  • Place a large baking sheet on the middle rack of the oven.
  • Preheat the oven to 400 degrees F.
  • Tear a large piece of parchment paper and set it aside.
  • In a large, resealable plastic bag, add 1 of the chicken breasts.
  • Squeeze the air of the bag and seal it.
  • Using a rolling pin or a meat mallet, pound the chicken breast in the bag to 1/2-inch-thickness.
  • Transfer the flattened chicken from the bag and repeating the flattening process with the remaining chicken breasts.
  • Season the flattened chicken breasts evenly with the salt and the black pepper.
  • Transfer the flattened chicken breasts to the prepared piece of parchment paper, spreading them out evenly.
  • In a large bowl, add the cream cheese and the mayonnaise and use a large spoon or spatula to stir until smooth.
  • Add the cheddar cheese, the bacon, the almonds, the garlic powder, and 1/2 of the green onions to the cream cheese mixture and stir to combine.
  • Spread the cream cheese mixture evenly over the tops of the chicken breasts.
  • Carefully transfer the parchment paper with the chicken breasts to the hot baking sheet.
  • Bake until the cheese is melted and the chicken reaches an internal temperature of 165 degrees F, about 10-15 minutes.
  • Allow the chicken to rest for 5 minutes.
  • Serve garnished with the remaining green onions.
