Rosemary Chicken has a simple yet elegant way of being the main attraction at any table for any occasion. Whether it's just a normal Wednesday night or it's the mother-in-law is coming and things have to be just right kind of affiar, this rosemary-infused, juicy chicken is the perfect answer to keeping all your people happy. This chicken is the leader of the pack in classic fare that gets along well with lots of side dishes, leaving your meals open to endless options. Rosemary Chicken really is the pinnacle of chicken choices, with a bougie yet down-to-earth goodness that everyone will fall in love with. We don't normally recommend being a people pleaser, but with this deliciousness on the menu, you are sure to please your people and leave your mother-in-law speechless! Ingredients
- 1 1/4 pounds chicken breasts, boneless and skinless
- salt, to taste
- black pepper, to taste
- 1 tablespoon olive oil
- 2 teaspoons fresh rosemary leaves, minced
- 3 tablespoons butter, melted
- 1 1/4 teaspoons garlic, minced
- 1/4 cup chicken broth
- 2 tablespoons lemon juice
- 1 tablespoon fresh parsley, chopped
- lemon slices, optional, to taste
- rosemary sprigs, optional, to taste
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Lightly coat a 9x13-inch baking dish with nonstick spray.
Step 3 -Generously season both sides of the chicken breasts with the salt and the black pepper.
Step 4 -In a large pan over medium-high heat, add the olive oil.
Step 5 -Add the chicken breasts to the olive oil and cook until browned, about 3-5 minutes per side.
Step 6 -Transfer the chicken breasts to the prepared baking dish.
Step 7 -In a small bowl, add the rosemary, the melted butter, the garlic, the chicken broth, and the lemon juice and mix well.
Step 8 -Evenly pour the rosemary butter mixture over the chicken breasts.
Step 9 -Bake the chicken breasts, uncovered, until they reach an internal temperature of 165 degrees F, about 25 minutes.
Step 10 -Spoon the sauce from the bottom of the baking dish over the chicken breasts and sprinkle with the parsley.
Step 11 -Garnish the chicken breasts with the lemon slices and the rosemary sprigs.
Step 12 -Plate and serve.
