Ingredients

For the sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine optional
  • 2 tablespoons ketchup
  • 1/4 cup chicken broth or water
  • 1 tablespoon cornstarch

For the stir-fry:

  • 1 tablespoon vegetable oil
  • 1 pound shrimp peeled and deveined
  • 1/2 tablespoon ginger freshly grated
  • 1 tablespoon garlic chopped
  • 1 medium red bell pepper sliced
  • 1 tablespoon green onions finely chopped
  • peanuts optional, to taste, crushed, for topping
  • white rice optional, to taste, cooked and hot, for serving

Directions

  • In a small mixing bowl, add the soy sauce, the Shaoxing wine, the ketchup, the broth, and the cornstarch and whisk until smooth.
  • In a large skillet over medium-high heat, add the oil until it sizzles.
  • Add the shrimps and cook, while stirring, until they turn pink and reach an internal temperature of 145 degrees F, about 4-6 minutes.
  • Add the ginger and the garlic to the skillet and cook until fragrant, about 1 minute.
  • Add the sauce mixture and the bell pepper and cook, while tossing well, until the sauce simmers and thickens, about 2-3 minutes.
  • Add the green onions and stir to combine.
  • Top with the crushed peanuts and serve with the white rice.
