Ingredients

For the sauce:

2 tablespoons soy sauce
1 tablespoon Shaoxing wine optional
2 tablespoons ketchup
1/4 cup chicken broth or water
1 tablespoon cornstarch

For the stir-fry:

1 tablespoon vegetable oil
1 pound shrimp peeled and deveined
1/2 tablespoon ginger freshly grated
1 tablespoon garlic chopped
1 medium red bell pepper sliced
1 tablespoon green onions finely chopped
peanuts optional, to taste, crushed, for topping
white rice optional, to taste, cooked and hot, for serving

Directions

In a small mixing bowl, add the soy sauce, the Shaoxing wine, the ketchup, the broth, and the cornstarch and whisk until smooth.
In a large skillet over medium-high heat, add the oil until it sizzles.
Add the shrimps and cook, while stirring, until they turn pink and reach an internal temperature of 145 degrees F, about 4-6 minutes.
Add the ginger and the garlic to the skillet and cook until fragrant, about 1 minute.
Add the sauce mixture and the bell pepper and cook, while tossing well, until the sauce simmers and thickens, about 2-3 minutes.
Add the green onions and stir to combine.
Top with the crushed peanuts and serve with the white rice.
