Ingredients
- olive oil to taste
- 1 (14.5-ounce) can diced tomatoes undrained, divided
- 6 (6-inch) flour tortillas divided
- 12 ounces lean ground beef
- 1 small onion chopped
- 1 red or green sweet pepper chopped
- 1 teaspoon chili powder
- 1/4 teaspoon ground cinnamon
- 4 ounces cheddar cheese shredded
- fresh cilantro leaves optional, to taste
Directions
- Preheat the oven to 400 degrees F.
- Brush a 9-inch pie plate with the olive oil.
- Spread a large spoonful of the diced tomatoes onto the bottom of the prepared pie plate.
- Arrange 4 of the tortillas on top of the tomatoes and up the sides of the plate, overlapping as necessary.
- In a large skillet, cook the ground beef, the onion, and the sweet pepper over medium-high heat until browned; drain off the fat.
- Add the chili powder and the cinnamon to the beef mixture and cook, while stirring, until fragrant, about 1 minute.
- Stir 1/2 of the remaining tomatoes into the beef mixture and bring to boil.
- Reduce the heat and cook the beef mixture, uncovered, until it thickens slightly, about 2 minutes.
- Spoon the beef mixture over the tortilla layer in the pie plate.
- Cut the remaining tortillas into large strips.
- Layer the cheese and the tortilla strips over the beef mixture.
- Top the tortillas with the remaining diced tomatoes.
- Bake, uncovered, until the tortillas are lightly browned, about 20-25 minutes.
- Let the pie stand for 5 minutes, then cut it into wedges.
- Top the pie with the cilantro and serve.
