Ingredients

For the soup:

  • 5 pounds russet or white potatoes peeled and cubed
  • 1 medium onion finely chopped
  • 5 (14.5-ounce) cans chicken broth
  • 1 clove garlic minced
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 (8-ounce) packages cream cheese softened and cubed
  • 1 cup half-and-half
  • 1/4 cup butter cubed

Optional toppings:

  • 1 pound bacon strips cooked and crumbled
  • 3/4 cup sharp cheddar cheese shredded
  • 1/4 cup chives minced

Directions

  • Place the potatoes and the onions in a 6-quart slow cooker.
  • Add in the broth, the garlic, the salt, and the pepper.
  • Cook, covered, on low until the potatoes are tender, about 8-10 hours.
  • Once tender, mash the potatoes to desired consistency.
  • Stir in the cream cheese, the half-and-half, and the butter.
  • Cook, covered, until heated through, about 15 minutes.
  • Just before serving, whisk the soup to combine.
  • Serve topped with the bacon, the cheese, and the chives.
