Ingredients
For the soup:
- 5 pounds russet or white potatoes peeled and cubed
- 1 medium onion finely chopped
- 5 (14.5-ounce) cans chicken broth
- 1 clove garlic minced
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper
- 2 (8-ounce) packages cream cheese softened and cubed
- 1 cup half-and-half
- 1/4 cup butter cubed
Optional toppings:
- 1 pound bacon strips cooked and crumbled
- 3/4 cup sharp cheddar cheese shredded
- 1/4 cup chives minced
Directions
- Place the potatoes and the onions in a 6-quart slow cooker.
- Add in the broth, the garlic, the salt, and the pepper.
- Cook, covered, on low until the potatoes are tender, about 8-10 hours.
- Once tender, mash the potatoes to desired consistency.
- Stir in the cream cheese, the half-and-half, and the butter.
- Cook, covered, until heated through, about 15 minutes.
- Just before serving, whisk the soup to combine.
- Serve topped with the bacon, the cheese, and the chives.
