Ingredients

  • 1 large yellow onion sliced
  • 1 (8-ounce) package mushrooms sliced
  • 1 1/2-2- pounds round steak
  • 1 (1-ounce) package onion soup mix
  • 2 cups low-sodium beef broth
  • 3 tablespoons cornstarch
  • salt to taste
  • black pepper to taste
  • parsley leaves optional, to taste, for garnish

Directions

  • Preheat a slow cooker.
  • Add 1/2 of the onions and 1/2 of the mushrooms to the slow cooker.
  • Place the round steaks on top of the onion-mushroom mixture in the slow cooker.
  • Sprinkle the steaks with the onion soup mix, flipping to coat all sides.
  • Add the remaining onions and the remaining mushrooms on top of the steaks in the slow cooker.
  • Add the beef broth to the slow cooker.
  • Cover the slow cooker and cook on low until the steaks are tender, about 8 hours.
  • Transfer 1/4 cup of the cooking liquid to a large measuring cup.
  • Add the cornstarch to the cooking liquid in the measuring cup and whisk to combine into a slurry.
  • Add the slurry mixture to the slow cooker and increase the slow cooker heat to high.
  • Cook the steak mixture, uncovered and while stirring occasionally, until the cooking liquid thickens into a sauce, about 15-20 minutes.
  • Season the steak mixture with the salt and the pepper, as needed.
  • Serve garnished with the parsley leaves.
