Ingredients
- 1 large yellow onion sliced
- 1 (8-ounce) package mushrooms sliced
- 1 1/2-2- pounds round steak
- 1 (1-ounce) package onion soup mix
- 2 cups low-sodium beef broth
- 3 tablespoons cornstarch
- salt to taste
- black pepper to taste
- parsley leaves optional, to taste, for garnish
Directions
- Preheat a slow cooker.
- Add 1/2 of the onions and 1/2 of the mushrooms to the slow cooker.
- Place the round steaks on top of the onion-mushroom mixture in the slow cooker.
- Sprinkle the steaks with the onion soup mix, flipping to coat all sides.
- Add the remaining onions and the remaining mushrooms on top of the steaks in the slow cooker.
- Add the beef broth to the slow cooker.
- Cover the slow cooker and cook on low until the steaks are tender, about 8 hours.
- Transfer 1/4 cup of the cooking liquid to a large measuring cup.
- Add the cornstarch to the cooking liquid in the measuring cup and whisk to combine into a slurry.
- Add the slurry mixture to the slow cooker and increase the slow cooker heat to high.
- Cook the steak mixture, uncovered and while stirring occasionally, until the cooking liquid thickens into a sauce, about 15-20 minutes.
- Season the steak mixture with the salt and the pepper, as needed.
- Serve garnished with the parsley leaves.
