Ingredients

  • 4 ounces cream cheese, room temperature
  • 1/2 cup mayonnaise
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 3 tablespoons jarred diced pimiento peppers, drained
  • 2 teaspoons onion, grated
  • 1 cup Monterey Jack cheese, grated
  • 1 cup sharp cheddar cheese, grated
  • crackers, optional, to taste, for serving

Directions

Step 1 -In a medium bowl, add the cream cheese and using an electric handheld mixer, beat until it is soft.

Step 2 -Scrape the sides and the bottom of the bowl.

Step 3 -Add the mayonnaise, the garlic powder, the onion powder, the salt, and the black pepper to the cream cheese and beat until it is combined and smooth.

Step 4 -Taste the cream cheese mixture and add more of the salt and more of the black pepper, as needed.

Step 5 -Add the pimiento peppers, the onions, the Monterey Jack cheese, and the cheddar cheese to the cream cheese mixture and stir until evenly combined.

Step 6 -Cover the bowl and chill it in the refrigerator for 1 hour.

Step 7 -Serve the dip with the crackers.
