Ingredients
- 4 ounces cream cheese room temperature
- 1/2 cup mayonnaise
- 1/8 teaspoon garlic powder
- 1/8 teaspoon onion powder
- kosher salt to taste
- freshly ground black pepper to taste
- 3 tablespoons jarred diced pimiento peppers drained
- 2 teaspoons onion grated
- 1 cup Monterey Jack cheese grated
- 1 cup sharp cheddar cheese grated
- crackers optional, to taste, for serving
Directions
- In a medium bowl, add the cream cheese and using an electric handheld mixer, beat until it is soft.
- Scrape the sides and the bottom of the bowl.
- Add the mayonnaise, the garlic powder, the onion powder, the salt, and the black pepper to the cream cheese and beat until it is combined and smooth.
- Taste the cream cheese mixture and add more of the salt and more of the black pepper, as needed.
- Add the pimiento peppers, the onions, the Monterey Jack cheese, and the cheddar cheese to the cream cheese mixture and stir until evenly combined.
- Cover the bowl and chill it in the refrigerator for 1 hour.
- Serve the dip with the crackers.
