Ingredients

- 6 ounces egg noodles
- 2 teaspoons oil
- 4 cloves garlic sliced thin
- 12 ounces fresh broccoli florets chopped
- 1 tablespoon butter
- 1 medium shallot minced
- 3 tablespoons all-purpose flour
- 1 3/4 cups chicken broth
- 1 cup 1% milk
- 12 ounces chicken breast cooked and shredded
- 4 ounces reduced-fat sharp cheddar shredded
- 3 tablespoons parmesan cheese shredded
- 2 tablespoons seasoned breadcrumbs
Directions
- Preheat the oven to 375 degrees F.
- Lightly spray a 9x13-inch casserole dish with cooking spray.
- Bring a large pot of salted water to a boil and cook the noodles to al dente, according to the package directions.
- While the noodles are cooking, in a large skillet, heat the oil.
- Add the garlic to the oil and cook until golden, about 1 minute.
- Add the broccoli and the salt to the oil, sauté, cover, and cook over medium heat until the broccoli begins to soften, about 4-5 minutes.
- In a large pot over medium-low heat, melt the butter.
- Add the shallots to the melted butter and cook until soft, about 2-3 minutes.
- Add the flour and the salt to the shallots and cook for 2-3 minutes.
- Slowly whisk the chicken broth into the shallot mixture until well combined, about 30 seconds.
- Add the milk to the broth mixture and bring to a boil.
- Lower the heat to medium and simmer the milk mixture, stirring occasionally, until it has thickened, about 6-7 minutes.
- Transfer the milk mixture away from the heat and add the cheddar cheese and 1 tablespoon of the parmesan cheese. Mix well until the cheese has melted.
- Add the chicken, the cooked noodles, and the cooked broccoli mixture to the cheese mixture and mix well until evenly coated.
- Pour the casserole mixture into the prepared casserole dish.
- Sprinkle the casserole with the breadcrumbs and the remaining parmesan cheese.
- Lightly spray more of the cooking spray on top of the casserole and bake until heated through, about 20-25 minutes.
- Place the casserole in the broiler until the breadcrumbs are browned and crisp, about 1 minute.
