Ingredients

  • salt to taste
  • 6 ounces egg noodles
  • 2 teaspoons oil
  • 4 cloves garlic sliced thin
  • 12 ounces fresh broccoli florets chopped
  • 1 tablespoon butter
  • 1 medium shallot minced
  • 3 tablespoons all-purpose flour
  • 1 3/4 cups chicken broth
  • 1 cup 1% milk
  • 12 ounces chicken breast cooked and shredded
  • 4 ounces reduced-fat sharp cheddar shredded
  • 3 tablespoons parmesan cheese shredded
  • 2 tablespoons seasoned breadcrumbs

Directions

  • Preheat the oven to 375 degrees F.
  • Lightly spray a 9x13-inch casserole dish with cooking spray.
  • Bring a large pot of salted water to a boil and cook the noodles to al dente, according to the package directions.
  • While the noodles are cooking, in a large skillet, heat the oil.
  • Add the garlic to the oil and cook until golden, about 1 minute.
  • Add the broccoli and the salt to the oil, sauté, cover, and cook over medium heat until the broccoli begins to soften, about 4-5 minutes.
  • In a large pot over medium-low heat, melt the butter.
  • Add the shallots to the melted butter and cook until soft, about 2-3 minutes.
  • Add the flour and the salt to the shallots and cook for 2-3 minutes.
  • Slowly whisk the chicken broth into the shallot mixture until well combined, about 30 seconds.
  • Add the milk to the broth mixture and bring to a boil.
  • Lower the heat to medium and simmer the milk mixture, stirring occasionally, until it has thickened, about 6-7 minutes.
  • Transfer the milk mixture away from the heat and add the cheddar cheese and 1 tablespoon of the parmesan cheese. Mix well until the cheese has melted.
  • Add the chicken, the cooked noodles, and the cooked broccoli mixture to the cheese mixture and mix well until evenly coated.
  • Pour the casserole mixture into the prepared casserole dish.
  • Sprinkle the casserole with the breadcrumbs and the remaining parmesan cheese.
  • Lightly spray more of the cooking spray on top of the casserole and bake until heated through, about 20-25 minutes.
  • Place the casserole in the broiler until the breadcrumbs are browned and crisp, about 1 minute.
  • Serve.
