Nostalgia is a delicious thing, especially when you're sitting down to a big bowl of food that Tastes Like Mom's Butter Noodles! These take you right back to childhood, eagerly awaiting those tender noodles coated in nutty, rich brown butter and sharp parmesan! Crunchy breadcrumbs sprinkled throughout add that homely feeling to each bite, as does the aromatic garlic and hot pepper flakes mixed in. Tastes Like Mom's Butter Noodles might even be better than Mom's own noodles... but don't tell her that!
Ingredients
- 1 (16-ounce) package spaghetti
- 10 tablespoons unsalted butter, divided
- 1 cup panko breadcrumbs
- 3 cloves garlic, minced
- 1/4 teaspoon red pepper flakes, plus more, to taste
- 1 cup parmesan cheese, grated
- 2 tablespoons lemon juice, freshly squeezed
- 2 tablespoons fresh parsley leaves, coarsely chopped
- salt, to taste
Directions
Step 1 -In a large pot of salted, boiling water, add the spaghetti and cook until just al dente, according to the package directions.
Step 2 -Drain the pasta and set it aside.
Step 3 -In a large, high-sided skillet over medium heat, melt 2 tablespoons of the butter until it is foaming.
Step 4 -Add the panko and cook, while stirring occasionally, until lightly browned, about 3-4 minutes.
Step 5 -Transfer the toasted panko to a bowl.
Step 6 -Wipe out the skillet with a paper towel.
Step 7 -In the same skillet over low heat, melt the remaining butter, while stirring it gently but constantly with a wooden spoon.
Step 8 -Continue to cook the butter, while stirring, until it begins to foam and turn brown in spots.
Step 9 -Add the garlic and 1/4 teaspoon of the red pepper flakes to the melted butter and cook, while stirring constantly, until the butter is fully browned and the butter mixture is fragrant, about 1-2 minutes.
Step 10 -Transfer the skillet from the heat.
Step 11 -Add the pasta and the parmesan to the butter mixture and using tongs, toss to combine and evenly coat.
Step 12 -Add the lemon juice, the parsley, and the toasted panko and toss to combine.
Step 13 -Taste for seasoning and add the salt and the extra red pepper flakes, as needed.
Step 14 -Serve.
