Ingredients

For the chicken:

  • 1 pound chicken breasts boneless and skinless
  • 1 envelope taco seasoning
  • 1 cup chunky salsa
  • 1/4 cup tequila
  • rice to taste, cooked and hot

Optional toppings:

  • avocado to taste, sliced
  • fresh cilantro to taste
  • lime wedges to taste

Directions

  • Season the chicken breasts with the taco seasoning and place them in a 6-quart electric pressure cooker.
  • In a bowl, combine the salsa and the tequila and pour the mixture over the chicken.
  • Lock the lid of the pressure cooker, close the pressure-release valve, and adjust it to high heat for 6 minutes.
  • Quick-release the pressure and use an instant thermometer to ensure the chicken breasts have reached an internal temperature of at least 165 degrees F.
  • Transfer the chicken breasts to a plate to rest until they are cool enough to handle.
  • Use two forks to shred the chicken breasts and return the meat to the pressure cooker.
  • Serve the chicken over the rice and top with the avocado, the cilantro, and the lime wedges.
