Ingredients
For the chicken:
- 1 pound chicken breasts boneless and skinless
- 1 envelope taco seasoning
- 1 cup chunky salsa
- 1/4 cup tequila
- rice to taste, cooked and hot
Optional toppings:
- avocado to taste, sliced
- fresh cilantro to taste
- lime wedges to taste
Directions
- Season the chicken breasts with the taco seasoning and place them in a 6-quart electric pressure cooker.
- In a bowl, combine the salsa and the tequila and pour the mixture over the chicken.
- Lock the lid of the pressure cooker, close the pressure-release valve, and adjust it to high heat for 6 minutes.
- Quick-release the pressure and use an instant thermometer to ensure the chicken breasts have reached an internal temperature of at least 165 degrees F.
- Transfer the chicken breasts to a plate to rest until they are cool enough to handle.
- Use two forks to shred the chicken breasts and return the meat to the pressure cooker.
- Serve the chicken over the rice and top with the avocado, the cilantro, and the lime wedges.
