Ingredients
- 1 cup butter
- 1 (16-ounce) package spaghetti cooked
- 6 ounces salt dried mizithra cheese finely grated, divided, can substitute feta or Italian ricotta salata
- fresh basil optional, to taste, sliced, for garnish
Directions
- In a small saucepan over medium heat, add the butter and slowly melt it, while stirring, until it is golden-brown, about 4 minutes.
- Transfer the melted brown butter to a tempered glass bowl or a measuring cup and allow the sediment to settle at the bottom, about 2 minutes.
- Pour the sediment-free brown butter into a separate bowl, making sure to reserve the sediment in the glass bowl or measuring cup.
- Discard the butter sediment.
- Add the pasta to the brown butter and toss to coat.
- Reserve 1/2 cup of the grated cheese.
- Add the remaining grated cheese to the butter-coated pasta, stirring to coat.
- Sprinkle the pasta with the remaining cheese.
- Serve garnished with the basil.
