In just 15 minutes, you'll find yourself with a bowl of buttery, rich, tender noodles with a sprinkling of extra-tangy mizithra cheese (or feta!). All it needs is a touch of basil fragrance and it's perfect! No frills, just thrills!

Ingredients

  • 1 cup butter
  • 1 (16-ounce) package spaghetti cooked
  • 6 ounces salt dried mizithra cheese finely grated, divided, can substitute feta or Italian ricotta salata
  • fresh basil optional, to taste, sliced, for garnish

Directions

  • In a small saucepan over medium heat, add the butter and slowly melt it, while stirring, until it is golden-brown, about 4 minutes.
  • Transfer the melted brown butter to a tempered glass bowl or a measuring cup and allow the sediment to settle at the bottom, about 2 minutes.
  • Pour the sediment-free brown butter into a separate bowl, making sure to reserve the sediment in the glass bowl or measuring cup.
  • Discard the butter sediment.
  • Add the pasta to the brown butter and toss to coat.
  • Reserve 1/2 cup of the grated cheese.
  • Add the remaining grated cheese to the butter-coated pasta, stirring to coat.
  • Sprinkle the pasta with the remaining cheese.
  • Serve garnished with the basil.
